How We Do Barbecue
Everything on our menu starts the same way: wood, fire, smoke, and time. No shortcuts. Just real barbecue built around the proteins we’re most proud of and the flavors that make people stop mid-conversation.
At the center is the Texas Trinity: brisket, pork ribs, and house-made sausage. Around it, you’ll find pulled pork, dino beef ribs, smoked turkey, and chicken finished over an open fire.
We serve our food as composed platters and packs with set portions so you know exactly what you’re getting. No guessing. No by-the-pound math.

What Comes Off Our Smoker
Wood, fire, smoke, and time. Every protein on our menu is prepared with the same obsessive attention to craft. No shortcuts, no exceptions.
Brisket
The heart of Texas barbecue. Salt, pepper, smoke—nothing more. Sliced fatty or lean, or chopped for sandwiches. The centerpiece of every great spread.
Pork Spare Ribs
Full racks smoked until the bark is set and the bite is clean. Finished with our signature glaze— a little sweet, a little savory, never too sticky.
House Made Sausage
Ground in house and smoked to a clean snap. A beef and pork blend in two varieties: classic link or jalapeño pepper jack. The third pillar of the Texas Trinity.
Turkey Breast
Not your dry Thanksgiving bird. Brined, smoked, and rested in butter until tender and juicy. Sliced thin so it melts in your mouth.
Half Chicken
Seasoned with our signature poultry blend, smoked until tender, then kissed by open flame for a touch of char. Finished with our house glaze.
Pulled Pork Shoulder
Whole pork shoulder is smoked low and slow until it pulls apart effortlessly. Finished with a touch of our signature glaze.
Dino Beef Ribs
The showstopper. Massive beef ribs seasoned simply and smoked low and slow until tender with a deep, peppery bark.
It's brisket on a stick.
All meats are served with our house-made pickles and onions.

How It Works
Getting your hands on Covenant Barbecue happens one of two ways.
Weekly Family Meals
For smaller orders built around feeding your household or a small group, we run a weekly order window. Orders open Sunday and close Tuesday. We shop, we prep, we smoke. Your food is ready for pickup by the weekend.
